Ingredients

  1. 2 lbs frozen french fries (thick-cut or steak fries work best)
  2. 2 cups prepared chili (homemade or canned)
  3. 1 1/2 cups sharp cheddar cheese, shredded
  4. 1/2 cup Monterey Jack cheese, shredded
  5. 1/4 cup green onions, finely chopped
  6. 1/4 cup fresh chives, chopped
  7. 2 tablespoons sour cream (optional)
  8. 1 jalapeño, thinly sliced (optional)
  9. Salt and pepper to taste

 

For Homemade Chili (if making from scratch):

  1. 1 lb ground beef
  2. 1 small onion, diced
  3. 2 cloves garlic, minced
  4. 1 can (15 oz) kidney beans, drained
  5. 1 can (14.5 oz) diced tomatoes
  6. 2 tablespoons tomato paste
  7. 1 tablespoon chili powder
  8. 1 teaspoon cumin
  9. 1/2 teaspoon paprika
  10. Salt and pepper to taste

  2. Large skillet (if making homemade chili)
  3. Saucepan (if using canned chili)
  4. Large serving platter
  5. Measuring cups and spoons
  6. Knife and cutting board
  7. Wooden spoon

 

Steps

  1. Prepare the Fries: Preheat oven to 450°F (230°C). Spread frozen fries in a single layer on a large baking sheet. Bake for 25-30 minutes until golden brown and crispy, flipping once halfway through.
  2. Make Chili (if using homemade): While fries cook, brown ground beef in a large skillet over medium-high heat. Add onion and garlic, cook until softened. Stir in tomato paste, chili powder, cumin, and paprika. Add diced tomatoes and kidney beans. Simmer for 15-20 minutes until thickened. Season with salt and pepper.
  3. Heat Store-bought Chili: If using canned chili, heat in a saucepan over medium heat for 5-7 minutes, stirring occasionally.
  4. Assemble the Dish: Transfer hot fries to a large serving platter or individual plates. Immediately top with hot chili, spreading evenly over the fries.
  5. Add Cheese: Sprinkle both cheddar and Monterey Jack cheese over the hot chili. The heat will begin melting the cheese immediately.
  6. Final Toppings: Garnish with chopped green onions and chives. Add jalapeño slices and dollops of sour cream if desired. Serve immediately while hot and cheese is melted.
