Ingredients

  1. 1 pound veal cutlets (thinly sliced)
  2. 1/2 cup all-purpose flour (for dredging)
  3. 2 large eggs, beaten
  4. 1 cup Italian-style breadcrumbs
  5. 1/2 cup grated Parmesan cheese
  6. 1 teaspoon garlic powder
  7. 1 teaspoon dried oregano
  8. Salt and pepper to taste
  9. 3 tablespoons olive oil (for frying)
  10. 1 1/2 cups marinara sauce
  11. 1 1/2 cups shredded mozzarella cheese
  12. Fresh basil or parsley (optional, for garnish)

Steps

  1. Prepare the Veal: Pat the veal cutlets dry with paper towels. Season both sides with salt and pepper. Set up a dredging station with three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs mixed with Parmesan cheese, garlic powder, and oregano.
  2. Dredge the Veal: Dredge each veal cutlet first in the flour, shaking off any excess. Then dip it into the beaten eggs, letting any excess drip off, and finally coat it in the breadcrumb mixture. Press the breadcrumbs onto the veal to ensure a good coating.
  3. Fry the Veal: Heat the olive oil in a large skillet over medium heat. Once hot, add the breaded veal cutlets and cook for about 3-4 minutes per side, or until golden brown and crispy. Transfer the cooked veal to a paper towel-lined plate to drain any excess oil.
  4. Preheat the Oven: Preheat your oven to 375°F (190°C). Lightly grease a baking sheet or casserole dish.
  5. Assemble the Veal Parmesan: Spread about 1/2 cup of marinara sauce on the bottom of the baking sheet or casserole dish. Place the fried veal cutlets on top of the sauce. Spoon the remaining marinara sauce over each cutlet and sprinkle mozzarella cheese evenly over the top.
  6. Bake the Veal: Place the veal in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly and the veal is cooked through.
  7. Serve: Garnish with freshly chopped basil or parsley if desired. Serve the veal parmesan with spaghetti, garlic bread, or a fresh salad.
