Ingredients

  1. 3 large ripe plantains (yellow with black spots)
  2. 3 tablespoons coconut oil or vegetable oil
  3. 1/2 teaspoon salt
  4. 1/4 teaspoon black pepper
  5. 1/2 teaspoon garlic powder
  6. 1/4 teaspoon paprika
  7. 1/4 teaspoon ground cumin (optional)
  8. 1/8 teaspoon cayenne pepper (optional, for heat)

 

For Serving (Optional):

  1. Lime wedges
  2. Cilantro-lime aioli
  3. Spicy mayo
  4. Fresh cilantro, chopped

Kitchen Tools Needed:

  1. Large baking sheet
  2. Parchment paper
  3. Large mixing bowl
  4. Small mixing bowl
  5. Sharp knife
  6. Cutting board
  7. Measuring spoons
  8. Tongs or spatula for flipping

Steps

  1. Prepare the Oven: Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease with oil.
  2. Prepare the Plantains: Peel plantains and cut into fry-shaped strips about 1/2 inch thick and 3-4 inches long. Try to keep pieces uniform for even cooking.
  3. Season the Plantains: In a large bowl, toss plantain strips with oil until evenly coated. In a small bowl, mix salt, pepper, garlic powder, paprika, cumin, and cayenne. Sprinkle seasoning mixture over plantains and toss until well coated.
  4. Arrange for Baking: Spread plantain fries in a single layer on the prepared baking sheet, making sure they don't overlap. Leave space between pieces for proper browning.
  5. Bake: Bake for 15-20 minutes, then flip each fry and bake for another 10-15 minutes until golden brown and caramelized on the edges. They should be tender inside and slightly crispy outside.
  6. Finish & Serve: Remove from oven and let cool for 2-3 minutes. Serve immediately while warm with lime wedges and your choice of dipping sauces.
