Ingredients
- 3 large ripe plantains (yellow with black spots)
- 3 tablespoons coconut oil or vegetable oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- 1/4 teaspoon ground cumin (optional)
- 1/8 teaspoon cayenne pepper (optional, for heat)
For Serving (Optional):
- Lime wedges
- Cilantro-lime aioli
- Spicy mayo
- Fresh cilantro, chopped
Kitchen Tools Needed:
- Large baking sheet
- Parchment paper
- Large mixing bowl
- Small mixing bowl
- Sharp knife
- Cutting board
- Measuring spoons
- Tongs or spatula for flipping
Steps
- Prepare the Oven: Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease with oil.
- Prepare the Plantains: Peel plantains and cut into fry-shaped strips about 1/2 inch thick and 3-4 inches long. Try to keep pieces uniform for even cooking.
- Season the Plantains: In a large bowl, toss plantain strips with oil until evenly coated. In a small bowl, mix salt, pepper, garlic powder, paprika, cumin, and cayenne. Sprinkle seasoning mixture over plantains and toss until well coated.
- Arrange for Baking: Spread plantain fries in a single layer on the prepared baking sheet, making sure they don't overlap. Leave space between pieces for proper browning.
- Bake: Bake for 15-20 minutes, then flip each fry and bake for another 10-15 minutes until golden brown and caramelized on the edges. They should be tender inside and slightly crispy outside.
- Finish & Serve: Remove from oven and let cool for 2-3 minutes. Serve immediately while warm with lime wedges and your choice of dipping sauces.
