Ingredients
- 3-4 lb rump roast (bottom round)
- 1 packet onion soup mix
- 1 cup beef broth
- 1 large onion, sliced
- 3 medium carrots, cut into chunks
- 3 medium potatoes, quartered
- Salt and black pepper to taste
Steps
- Season the Roast: Season rump roast with salt and pepper on all sides. Place in slow cooker.
- Add Vegetables: Arrange onion slices, carrots, and potatoes around the roast in the slow cooker.
- Add Seasoning and Liquid: Sprinkle onion soup mix over the roast and vegetables. Pour beef broth around (not over) the roast.
- Cook: Cover and cook on LOW for 8-9 hours or HIGH for 5-6 hours, until meat is fork-tender. Note: Rump roast may take slightly longer than chuck roast due to being leaner.
- Rest and Serve: Remove roast and let rest for 10 minutes before slicing against the grain. Serve with the tender vegetables and cooking juices.
