Ingredients

  1. 3-4 lb rump roast (bottom round)
  2. 1 packet onion soup mix
  3. 1 cup beef broth
  4. 1 large onion, sliced
  5. 3 medium carrots, cut into chunks
  6. 3 medium potatoes, quartered
  7. Salt and black pepper to taste

Steps

  1. Season the Roast: Season rump roast with salt and pepper on all sides. Place in slow cooker.
  2. Add Vegetables: Arrange onion slices, carrots, and potatoes around the roast in the slow cooker.
  3. Add Seasoning and Liquid: Sprinkle onion soup mix over the roast and vegetables. Pour beef broth around (not over) the roast.
  4. Cook: Cover and cook on LOW for 8-9 hours or HIGH for 5-6 hours, until meat is fork-tender. Note: Rump roast may take slightly longer than chuck roast due to being leaner.
  5. Rest and Serve: Remove roast and let rest for 10 minutes before slicing against the grain. Serve with the tender vegetables and cooking juices.
