Ingredients
- 1 lb ground beef (or ground turkey for a lighter option)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth (or chicken broth)
- 1 green bell pepper, diced
- 2 tablespoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon cayenne pepper (optional, for heat)
- Salt and black pepper, to taste

- Slow cooker
- Skillet
- Wooden spoon or spatula
- Measuring cups and spoons
- Ladle
Steps
- Brown the Ground Beef: In a skillet over medium heat, cook the ground beef with the diced onion until the beef is browned and the onion is soft, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes. Drain any excess fat.
- Add Ingredients to the Slow Cooker: Transfer the cooked beef mixture to the slow cooker. Add the kidney beans, black beans, diced tomatoes, tomato paste, beef broth, diced bell pepper, chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir to combine.
- Cook the Chili: Cover and cook on low for 6-8 hours or on high for 3-4 hours, stirring occasionally.
- Adjust Seasoning: Taste the chili and adjust the seasoning with more salt, pepper, or spices if needed.
- Serve: Ladle the chili into bowls and top with shredded cheese, sour cream, and sliced green onions. Serve with tortilla chips or cornbread if you would like.
