Ingredients
- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 1 tbsp honey
- 1 tsp dried thyme
- Salt and pepper to taste
- 1 tbsp chopped fresh parsley (optional)

Steps
- Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Toss the carrots: In a mixing bowl, toss the carrot sticks with olive oil, honey, dried thyme, salt, and pepper until evenly coated.
- Roast: Spread the carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized.
