Ingredients

  1. 1 lb carrots, peeled and cut into sticks
  2. 2 tbsp olive oil
  3. 1 tbsp honey
  4. 1 tsp dried thyme
  5. Salt and pepper to taste
  6. 1 tbsp chopped fresh parsley (optional)

Steps

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Toss the carrots: In a mixing bowl, toss the carrot sticks with olive oil, honey, dried thyme, salt, and pepper until evenly coated.
  3. Roast: Spread the carrots in a single layer on the prepared baking sheet. Roast in the preheated oven for 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized.
