Ingredients

  1. 2 cups all-purpose flour
  2. 1 cup whole wheat flour
  3. 1 cup old-fashioned rolled oats
  4. 1 1/2 cups warm water (110°F/45°C)
  5. 1 packet active dry yeast (2 1/4 tsp)
  6. 1/4 cup honey
  7. 2 tbsp unsalted butter, melted
  8. 1 tsp salt
  9. 1/4 cup additional oats (for topping)

Steps

  1. Activate the yeast: In a large mixing bowl, combine the warm water, honey, and yeast. Let it sit for 5-10 minutes until foamy.
  2. Mix the dough: Add the melted butter, salt, all-purpose flour, whole wheat flour, and oats to the yeast mixture. Stir until a soft dough forms. Knead the dough by hand on a lightly floured surface for 8-10 minutes, or use a stand mixer with a dough hook for 5-7 minutes, until smooth and elastic.
  3. First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
  4. Shape the loaf: Turn the dough out onto a lightly floured surface and shape it into a loaf. Place the loaf in a parchment-lined bread pan.
  5. Second rise: Cover the loaf with a towel and let it rise for 30-45 minutes until puffy.
  6. Preheat the oven: Preheat your oven to 375°F (190°C).
  7. Bake: Brush the top of the loaf with a little water and sprinkle with additional oats. Bake for 30-35 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
  8. Cool and serve: Let the oatmeal bread cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing.
