Ingredients
- 1/4 cup fresh lemon juice (about 2 large lemons)
- 1 tablespoon lemon zest
- 3 tablespoons capers, drained and roughly chopped
- 2 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 1/2 cup extra virgin olive oil
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, chopped (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 teaspoon honey or maple syrup (optional, for balance)
Kitchen Tools Needed:
- Medium mixing bowl
- Whisk
- Measuring cups and spoons
- Fine grater or zester
- Sharp knife
- Cutting board
- Storage jar or bottle
Steps
- Prepare the Base: In a medium bowl, whisk together fresh lemon juice, lemon zest, minced garlic, and Dijon mustard until well combined.
- Add Oil Slowly: While whisking continuously, slowly drizzle in the olive oil in a thin stream to create an emulsion. The dressing should be smooth and slightly thickened.
- Incorporate Capers and Herbs: Stir in the chopped capers, fresh parsley, and dill (if using). Mix well to distribute evenly throughout the dressing.
- Season and Balance: Add salt, pepper, and taste. If the dressing is too tart, add honey or maple syrup to balance the acidity. Adjust seasoning as needed.
- Rest and Serve: Let the dressing sit for 10-15 minutes to allow flavors to meld. Give it a good stir or shake before using, as separation is natural.
