Ingredients

  1. 12 lasagna noodles
  2. 1 lb ground Italian sausage (or ground beef)
  3. 2 cups ricotta cheese
  4. 1 large egg
  5. 2 cups fresh spinach, chopped (or 1 cup frozen, thawed and drained)
  6. 1 cup mozzarella cheese, shredded, divided
  7. 1/2 cup Parmesan cheese, grated, divided
  8. 2 cloves garlic, minced
  9. 1 teaspoon Italian seasoning
  10. 1/2 teaspoon salt
  11. 1/4 teaspoon black pepper
  12. 3 cups marinara sauce, divided
  13. 2 tablespoons fresh basil, chopped (or 1 teaspoon dried)
  14. Fresh parsley, chopped (optional)

  5. 9x13 inch baking dish
  6. Aluminum foil
  7. Kitchen towels
  8. Measuring cups and spoons

Steps

  1. Prepare the Noodles: Preheat oven to 375°F. Cook lasagna noodles according to package directions until al dente. Drain and lay flat on a clean kitchen towel to prevent sticking.
  2. Cook the Meat: In a large skillet over medium-high heat, cook Italian sausage until browned and cooked through, about 6-8 minutes, breaking it up as it cooks. Drain excess fat and set aside to cool slightly.
  3. Make the Filling: In a large bowl, combine ricotta cheese, egg, chopped spinach, 3/4 cup mozzarella, 1/4 cup Parmesan, minced garlic, Italian seasoning, salt, and pepper. Mix until well combined. Stir in the cooked sausage.
  4. Prepare the Baking Dish: Spread 1 cup of marinara sauce evenly in the bottom of a 9x13 inch baking dish.
  5. Assemble the Rolls: Lay each lasagna noodle flat and spread about 1/3 cup of the ricotta mixture evenly over the length of the noodle, leaving a small border at one end. Carefully roll up the noodle from the filled end and place seam-side down in the prepared baking dish.
  6. Add Toppings & Bake: Pour remaining 2 cups marinara sauce over the rolls. Sprinkle with remaining mozzarella and Parmesan cheese. Cover tightly with foil and bake for 35-40 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly and golden.
  7. Rest & Serve: Let stand for 10 minutes before serving. Garnish with fresh parsley and additional Parmesan cheese. Sprinkle with fresh basil before serving.
