Ingredients

For the Brownies:

  1. 1/2 cup unsalted butter, melted
  2. 1 cup granulated sugar
  3. 2 large eggs
  4. 1 teaspoon vanilla extract
  5. 1/3 cup cocoa powder
  6. 1/2 cup all-purpose flour
  7. 1/4 teaspoon baking powder
  8. 1/4 teaspoon salt

 

For the Mint Layer:

  1. 1/4 cup unsalted butter, softened
  2. 1 1/2 cups powdered sugar
  3. 1 tablespoon milk
  4. 1/2 teaspoon peppermint extract
  5. 2-3 drops green food coloring (optional)

 

For the Chocolate Topping:

  1. 1/2 cup semisweet chocolate chips
  2. 2 tablespoons unsalted butter

Kitchen Tools Needed:

  1. Mixing bowls
  2. Whisk or electric mixer
  3. 8x8 inch baking pan
  4. Spatula
  5. Microwave-safe bowl

Steps

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking pan or line it with parchment paper.
  2. Make the Brownie Batter: In a medium bowl, whisk together the melted butter and sugar. Add the eggs and vanilla extract, and whisk until well combined. Stir in the cocoa powder, flour, baking powder, and salt until smooth.
  3. Bake the Brownies: Pour the brownie batter into the prepared baking pan and smooth it into an even layer. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. Let the brownies cool completely before adding the mint layer.
  4. Prepare the Mint Layer: In a mixing bowl, beat the softened butter, powdered sugar, milk, peppermint extract, and food coloring (if using) until smooth and creamy. Spread this mint layer evenly over the cooled brownies. Place the brownies in the fridge to set for about 15-20 minutes.
  5. Make the Chocolate Topping: In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 20-second intervals, stirring between each, until the mixture is smooth and melted. Let it cool slightly.
  6. Top the Brownies: Pour the melted chocolate mixture over the mint layer and spread it out evenly with a spatula. Place the brownies back in the fridge to let the chocolate topping set.
  7. Cut and Serve: Once the chocolate has set, cut the brownies into squares and serve. Store any leftovers in the refrigerator.
