Ingredients
- 1 loaf (about 1 lb) day-old bread, cut into 1/2-inch cubes (white, sourdough, or French bread)
- 1 cup (2 sticks) unsalted butter
- 1 large onion, diced
- 3 celery stalks, diced
- 3 cloves garlic, minced
- 2 teaspoons poultry seasoning (or a mix of sage, thyme, and rosemary)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 1/2 to 3 cups chicken or vegetable broth
- 2 large eggs, lightly beaten
- 1/4 cup fresh parsley, chopped

- 9x13-inch baking dish

Steps
- Prepare the Bread: Preheat your oven to 350°F (175°C). Spread the bread cubes on a baking sheet and bake for 15-20 minutes, or until lightly toasted and dry. Set aside to cool.
- Cook the Vegetables: In a large skillet, melt the butter over medium heat. Add the diced onion and celery, and cook for 8-10 minutes, or until softened. Add the minced garlic, poultry seasoning, salt, and pepper, and cook for an additional 1-2 minutes.
- Combine the Ingredients: In a large mixing bowl, combine the toasted bread cubes, cooked vegetables, and chopped parsley. Pour in 2 1/2 cups of broth and the beaten eggs, and gently mix until the bread is evenly moistened. Add more broth if the stuffing appears dry.
- Bake the Stuffing: Transfer the mixture to a greased 9x13-inch baking dish. Cover with foil and bake at 350°F (175°C) for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown.
- Serve: Let the stuffing cool for a few minutes before serving.
