Ingredients
- 3 large yellow onions, thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons brown sugar
- 2 tablespoons balsamic vinegar
- 8 oz cream cheese, softened
- 1/2 cup sour cream
- 1/2 cup mayonnaise
- 1 packet onion soup mix
- 2 tablespoons fresh chives, chopped
- 1 tablespoon fresh thyme leaves
- 1/2 cup gruyere cheese, grated (optional)

Steps
- Caramelize the Onions: Heat butter and olive oil in a large skillet over medium-low heat. Add sliced onions, salt, and pepper. Cook slowly, stirring occasionally, for 45-60 minutes until onions are deep golden brown and jammy. Add brown sugar and balsamic vinegar in the last 5 minutes.
- Cool the Onions: Remove caramelized onions from heat and let cool completely, about 15 minutes.
- Prepare the Base: In a large mixing bowl, beat softened cream cheese until smooth and fluffy. Add sour cream, mayonnaise, and onion soup mix. Mix until well combined.
- Combine Ingredients: Fold in the cooled caramelized onions, fresh chives, and thyme leaves. Taste and adjust seasoning with salt and pepper as needed.
- Chill and Set: Cover and refrigerate for at least 2 hours or overnight to allow flavors to meld and dip to firm up.
- Final Touch (Optional): If using gruyere cheese, sprinkle on top and broil for 2-3 minutes until golden and bubbly before serving.
- Serve: Transfer to serving bowl and serve with chips, bread, or vegetables.
