Ingredients
- For the Beef:
- 1 lb ground beef
- 1 tablespoon olive oil
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1/4 cup water
- For the Bowl Base:
- 2 cups cooked rice (white, brown, or cilantro-lime rice)
- 1 cup canned black beans, rinsed and drained
- 1 cup canned corn, drained (optional)
- For the Toppings:
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/2 cup shredded cheddar or Monterey Jack cheese
- 1/2 avocado, sliced or diced
- 1/4 cup fresh cilantro, chopped
- 1/4 cup sour cream or Greek yogurt
- 1/4 cup salsa or pico de gallo
- Lime wedges (optional)
Kitchen Tools Needed:
- Large skillet
- Medium pot (for rice, if uncooked)
- Knife and cutting board
- Measuring cups and spoons
Steps
- Cook the Beef: Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it into crumbles with a spoon, until browned and cooked through. Stir in the taco seasoning and water. Cook for an additional 2-3 minutes, allowing the beef to absorb the seasoning. Remove from heat.
- Prepare the Base: If not already cooked, prepare the rice according to package instructions. Optionally, mix in some fresh lime juice and chopped cilantro for added flavor. Warm the black beans and corn (if using) in a saucepan or microwave.
- Assemble the Burrito Bowls: Divide the cooked rice into individual bowls as the base layer. Top each bowl with seasoned ground beef, black beans, and corn.
- Add the Toppings: Garnish each bowl with shredded lettuce, diced tomatoes, shredded cheese, avocado, and fresh cilantro. Add sour cream or Greek yogurt and salsa for extra flavor. Serve with lime wedges for a tangy finish.
- Serve: Enjoy immediately while all components are warm and fresh!
