Ingredients

  1. 2 cans (15 oz each) navy beans, drained and rinsed
  2. 1/2 cup ketchup
  3. 1/4 cup molasses
  4. 1/4 cup brown sugar
  5. 2 tbsp Dijon mustard
  6. 1 tbsp apple cider vinegar
  7. 4 slices bacon, chopped
  8. 1 small onion, chopped
  9. Salt and pepper to taste

Steps

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease a baking dish with butter or cooking spray.
  2. Cook the bacon and onions: In a large skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside. Add the chopped onion to the skillet and cook for 5-7 minutes until softened and lightly browned.
  3. Prepare the sauce: In a mixing bowl, combine the ketchup, molasses, brown sugar, Dijon mustard, and apple cider vinegar. Stir in the cooked onions and bacon, then season with salt and pepper to taste.
  4. Mix and bake: In the prepared baking dish, combine the drained navy beans with the sauce. Stir to coat the beans evenly. Cover the dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15 minutes, or until the beans are bubbling and the top is slightly caramelized.
  5. Serve: Let the baked beans cool slightly before serving. This dish is perfect as a side for barbecues, picnics, or any casual meal.
