Ingredients

  1. 1 tablespoon avocado or extra virgin olive oil
  2. ½ yellow onion, small diced
  3. 2 carrots, peeled and small diced
  4. 2 celery sticks, small diced
  5. 2” piece of ginger, peeled and minced
  6. 2 cloves of garlic, minced
  7. 2 pounds lean ground beef
  8. ¼ cup low-sodium soy sauce
  9. ½ cup hoisin sauce
  10. ½ cup raw unsalted peanuts, chopped
  11. ½ teaspoon crushed red pepper flakes
  12. 1 bunch scallions, sliced (whites and greens separated)
  13. 1 bag of romaine hearts or butter lettuce, washed and trimmed

Kitchen Tools Needed:

  5. Large sauté pan
  6. Wooden spoon

Steps

  1. Cook the vegetables: In a large sauté pan, heat the oil over medium heat and add the onion, carrots and celery. Cook for about 8 minutes until soft. Then, add the ginger and garlic and cook for another minute.
  2. Cook the beef: Turn the stove up to medium high heat and add the ground beef. Break apart and stir occasionally until browned and thoroughly cooked for about 10 minutes.
  3. Finish the filling: Add in the soy sauce, hoisin sauce, peanuts, red pepper flakes, and the scallion white parts. Cook for about 2 minutes until the mixture thickens.
  4. Serve: Add beef mixture to lettuce cups and garnish with the scallion green parts.
