Ingredients
- 1 tablespoon avocado or extra virgin olive oil
- ½ yellow onion, small diced
- 2 carrots, peeled and small diced
- 2 celery sticks, small diced
- 2” piece of ginger, peeled and minced
- 2 cloves of garlic, minced
- 2 pounds lean ground beef
- ¼ cup low-sodium soy sauce
- ½ cup hoisin sauce
- ½ cup raw unsalted peanuts, chopped
- ½ teaspoon crushed red pepper flakes
- 1 bunch scallions, sliced (whites and greens separated)
- 1 bag of romaine hearts or butter lettuce, washed and trimmed

- Large sauté pan
- Wooden spoon
Steps
- Cook the vegetables: In a large sauté pan, heat the oil over medium heat and add the onion, carrots and celery. Cook for about 8 minutes until soft. Then, add the ginger and garlic and cook for another minute.
- Cook the beef: Turn the stove up to medium high heat and add the ground beef. Break apart and stir occasionally until browned and thoroughly cooked for about 10 minutes.
- Finish the filling: Add in the soy sauce, hoisin sauce, peanuts, red pepper flakes, and the scallion white parts. Cook for about 2 minutes until the mixture thickens.
- Serve: Add beef mixture to lettuce cups and garnish with the scallion green parts.
