- 4 cups fresh arugula (lightly packed)
- 1/2 cup cherry tomatoes, halved
- 1/4 cup shaved Parmesan cheese or crumbled goat cheese (you can also use feta, blue cheese, or mozzarella)
- 1/4 cup toasted walnuts or pecans (optional)
- 1/2 avocado, sliced (optional)
- 1 tablespoon lemon juice (about half a lemon)
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Balsamic glaze or balsamic vinegar (optional, for drizzling)

Steps
- Prep the Salad Base: In a large salad bowl, combine the fresh arugula, halved cherry tomatoes, and shaved Parmesan cheese or crumbled goat cheese. If using, gently add the sliced avocado and toasted nuts.
- Make the Dressing: In a small bowl, whisk together the olive oil, lemon juice, a pinch of salt, and freshly ground black pepper.
- Dress the Salad: Drizzle the lemon-olive oil dressing over the arugula salad. Toss everything gently to coat the arugula evenly with the dressing.
- Serve: Transfer the salad to serving plates, and if desired, drizzle a small amount of balsamic glaze or vinegar over the top for added flavor. Enjoy immediately!
