Ingredients
- 2 cups all-purpose flour
- 3/4 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/3 cup butter, melted
- 1 large egg, beaten
- 3/4 cup orange juice
- 1 tablespoon orange zest
- 1 1/2 cups fresh or dried cranberries
- 1/2 cup chopped walnuts (optional)
For the Orange Glaze (optional):
- 1 cup powdered sugar
- 2-3 tablespoons orange juice
- 1/2 teaspoon orange zest

Steps
- Prepare for Baking: Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line with parchment paper. If using dried cranberries, soak them in warm water for 10 minutes, then drain.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- Combine Wet Ingredients: In a separate bowl, mix melted butter, beaten egg, orange juice, and orange zest until smooth.
- Make the Batter: Pour wet ingredients into dry ingredients and stir just until combined. Don't overmix. Gently fold in cranberries and walnuts if using.
- Bake the Bread: Pour batter into prepared loaf pan and spread evenly. Bake for 55-65 minutes, or until a toothpick inserted in center comes out clean or with just a few moist crumbs.
- Cool and Glaze: Cool in pan for 10 minutes, then turn out onto a wire rack. If making glaze, whisk powdered sugar, orange juice, and zest until smooth. Drizzle over cooled bread.
