Ingredients
- 2 lbs frozen french fries (thick-cut or steak fries work best)
- 2 cups prepared chili (homemade or canned)
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/2 cup Monterey Jack cheese, shredded
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh chives, chopped
- 2 tablespoons sour cream (optional)
- 1 jalapeño, thinly sliced (optional)
- Salt and pepper to taste
For Homemade Chili (if making from scratch):
- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) kidney beans, drained
- 1 can (14.5 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste

- Large baking sheet
- Large skillet (if making homemade chili)
- Saucepan (if using canned chili)
- Large serving platter
- Measuring cups and spoons
- Knife and cutting board
- Wooden spoon
Steps
- Prepare the Fries: Preheat oven to 450°F (230°C). Spread frozen fries in a single layer on a large baking sheet. Bake for 25-30 minutes until golden brown and crispy, flipping once halfway through.
- Make Chili (if using homemade): While fries cook, brown ground beef in a large skillet over medium-high heat. Add onion and garlic, cook until softened. Stir in tomato paste, chili powder, cumin, and paprika. Add diced tomatoes and kidney beans. Simmer for 15-20 minutes until thickened. Season with salt and pepper.
- Heat Store-bought Chili: If using canned chili, heat in a saucepan over medium heat for 5-7 minutes, stirring occasionally.
- Assemble the Dish: Transfer hot fries to a large serving platter or individual plates. Immediately top with hot chili, spreading evenly over the fries.
- Add Cheese: Sprinkle both cheddar and Monterey Jack cheese over the hot chili. The heat will begin melting the cheese immediately.
- Final Toppings: Garnish with chopped green onions and chives. Add jalapeño slices and dollops of sour cream if desired. Serve immediately while hot and cheese is melted.
