Ingredients

  1. 1 lb fettuccine pasta
  2. 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  3. 2 tablespoons cajun seasoning
  4. 3 tablespoons olive oil
  5. 3 cloves garlic, minced
  6. 2 cups heavy cream
  7. 1 cup grated Parmesan cheese
  8. 4 tablespoons butter
  9. Salt and pepper to taste
  10. 2 green onions, sliced
  11. 2 tablespoons fresh parsley, chopped

Steps

  1. Cook Pasta: Boil fettuccine according to package directions until al dente. Drain and set aside.
  2. Season and Cook Chicken: Season chicken pieces with cajun seasoning, salt, and pepper. Heat olive oil in a large skillet over medium-high heat. Cook chicken for 6-7 minutes until golden and cooked through. Remove and set aside.
  3. Make Sauce: In the same skillet, add garlic and cook for 30 seconds until fragrant. Pour in heavy cream and bring to a gentle simmer. Add butter and whisk until melted.
  4. Add Cheese: Gradually whisk in Parmesan cheese until smooth and creamy. Season with salt and pepper to taste.
  5. Combine Everything: Return chicken to the skillet along with the cooked pasta. Toss everything together for 2 minutes until well coated and heated through.
  6. Serve: Remove from heat and garnish with green onions and fresh parsley. Serve immediately.
