Ingredients

  1. 1 sheet frozen puff pastry, thawed
  2. 8 oz wheel of brie cheese, rind removed and cut into small cubes
  3. 1/2 cup dried cranberries or cranberry sauce
  4. 1/4 cup chopped walnuts or pecans (optional)
  5. 2 tablespoons honey
  6. 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  7. 1 egg, beaten (for egg wash)
  8. 1 tablespoon water
  9. Fresh rosemary sprigs for garnish (optional)
  10. Cooking spray or butter for greasing

Kitchen Tools Needed:

  1. 24-cup mini muffin tin
  2. Rolling pin
  3. Small mixing bowl
  4. Pastry brush
  5. Measuring cups and spoons
  6. Knife and cutting board
  7. Small spoon for filling

Steps

  1. Prep the Oven: Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray or butter.
  2. Prepare Puff Pastry: Roll out thawed puff pastry on a lightly floured surface. Cut into 24 squares, approximately 2x2 inches. Gently press each square into a mini muffin cup, allowing edges to come up slightly.
  3. Make Egg Wash: In a small bowl, whisk together beaten egg and water. Brush the edges of each pastry cup lightly with egg wash.
  4. Prepare Filling: In a bowl, gently combine brie cubes, cranberries, chopped nuts (if using), honey, and thyme leaves.
  5. Fill the Bites: Spoon about 1 teaspoon of the brie mixture into each pastry cup. Don't overfill to prevent spillover during baking.
  6. Bake: Bake for 12-15 minutes until pastry is golden brown and puffed, and brie is melted and bubbly.
  7. Cool & Serve: Let cool in pan for 2-3 minutes before carefully removing. Garnish with fresh rosemary if desired. Serve warm.
