Ingredients
- 1 sheet frozen puff pastry, thawed
- 8 oz wheel of brie cheese, rind removed and cut into small cubes
- 1/2 cup dried cranberries or cranberry sauce
- 1/4 cup chopped walnuts or pecans (optional)
- 2 tablespoons honey
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
- 1 egg, beaten (for egg wash)
- 1 tablespoon water
- Fresh rosemary sprigs for garnish (optional)
- Cooking spray or butter for greasing

- 24-cup mini muffin tin
- Rolling pin
- Small mixing bowl
- Pastry brush
- Measuring cups and spoons
- Knife and cutting board
- Small spoon for filling
Steps
- Prep the Oven: Preheat oven to 375°F (190°C). Lightly grease a 24-cup mini muffin tin with cooking spray or butter.
- Prepare Puff Pastry: Roll out thawed puff pastry on a lightly floured surface. Cut into 24 squares, approximately 2x2 inches. Gently press each square into a mini muffin cup, allowing edges to come up slightly.
- Make Egg Wash: In a small bowl, whisk together beaten egg and water. Brush the edges of each pastry cup lightly with egg wash.
- Prepare Filling: In a bowl, gently combine brie cubes, cranberries, chopped nuts (if using), honey, and thyme leaves.
- Fill the Bites: Spoon about 1 teaspoon of the brie mixture into each pastry cup. Don't overfill to prevent spillover during baking.
- Bake: Bake for 12-15 minutes until pastry is golden brown and puffed, and brie is melted and bubbly.
- Cool & Serve: Let cool in pan for 2-3 minutes before carefully removing. Garnish with fresh rosemary if desired. Serve warm.
