Ingredients
- 4 cups bread flour
- 1 1/2 cups warm water (110°F/45°C)
- 1 packet active dry yeast (2 1/4 tsp)
- 1 tsp sugar
- 2 tsp salt
- 2 tbsp olive oil

Steps
- Activate the yeast: In a large mixing bowl, combine the warm water, sugar, and yeast. Let it sit for 5-10 minutes until foamy.
- Mix the dough: Add the olive oil and salt to the yeast mixture. Gradually add the flour, mixing until a sticky dough forms. Knead the dough by hand on a lightly floured surface for 10 minutes, or use a stand mixer with a dough hook for 8 minutes, until smooth and elastic.
- First rise: Place the dough in a lightly greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for 1-2 hours, or until doubled in size.
- Shape the bread: Turn the dough out onto a well-floured surface and shape it into a rectangle. Fold the dough in thirds, then turn it over so the seam side is down. Place the dough on a parchment-lined baking sheet, and gently stretch it into a long, flat loaf.
- Second rise: Cover the dough with a towel and let it rise for 30-45 minutes until puffy.
- Preheat the oven: Preheat your oven to 425°F (220°C).
- Bake: Bake the ciabatta for 25-30 minutes, or until golden brown and sounds hollow when tapped on the bottom.
- Cool and serve: Let the ciabatta cool completely on a wire rack before slicing. This rustic bread is perfect for sandwiches or as a side to soups and salads.
