Ingredients

  1. 2 tablespoons extra virgin olive oil
  2. ½ yellow onion, small diced
  3. 2 carrots, peeled and small diced
  4. 4 garlic cloves, peeled and minced
  5. 1 cup dry red wine
  6. ¼ cup tomato paste
  7. 15 oz. can crushed tomatoes
  8. 1 (2”) piece parmesan rind (optional)
  9. 1 teaspoon dried thyme
  10. 1 bay leaf
  11. 1 tablespoon white sugar
  12. 1 tablespoon salt
  13. 1 teaspoon ground black pepper
  14. 2½ pounds bone-in short ribs
  15. Grated parmesan cheese

Kitchen Tools Needed:

  1. Slow cooker
  2. Tongs
  3. Large shallow spoon
  4. Cutting board
  5. 2 forks
  6. Large serving spoon

Steps

  1. Combine ingredients: Add all ingredients, except short ribs, into slow cooker and mix. Submerge short ribs into the mixture and cover.
  2. Cook sauce: Turn slow cooker on high and let cook for 4 hours.
  3. Finish sauce: Using a large shallow spoon, remove any oil from the surface and discard. Take short ribs out and place onto a cutting board. Remove bones and shred the meat using two forks. Return meat into the slow cooker and stir. Taste for seasonings.
  4. Serve: Serve the sauce over pasta, polenta, or white rice. Garnish with grated parmesan cheese if desired.
