Ingredients
- 2 tablespoons extra virgin olive oil
- ½ yellow onion, small diced
- 2 carrots, peeled and small diced
- 4 garlic cloves, peeled and minced
- 1 cup dry red wine
- ¼ cup tomato paste
- 15 oz. can crushed tomatoes
- 1 (2”) piece parmesan rind (optional)
- 1 teaspoon dried thyme
- 1 bay leaf
- 1 tablespoon white sugar
- 1 tablespoon salt
- 1 teaspoon ground black pepper
- 2½ pounds bone-in short ribs
- Grated parmesan cheese
Kitchen Tools Needed:
- Slow cooker
- Tongs
- Large shallow spoon
- Cutting board
- 2 forks
- Large serving spoon
Steps
- Combine ingredients: Add all ingredients, except short ribs, into slow cooker and mix. Submerge short ribs into the mixture and cover.
- Cook sauce: Turn slow cooker on high and let cook for 4 hours.
- Finish sauce: Using a large shallow spoon, remove any oil from the surface and discard. Take short ribs out and place onto a cutting board. Remove bones and shred the meat using two forks. Return meat into the slow cooker and stir. Taste for seasonings.
- Serve: Serve the sauce over pasta, polenta, or white rice. Garnish with grated parmesan cheese if desired.
